Healthy Holiday Eating

A lot of us work hard ahead of the holidays (and in general) to get into good shape, only for it to be undone by over eating and drinking come Christmas. Well, I think it’s time to forget the ‘I’ll sort it in the New Year’ resolution shenanigans and instead continue with a healthy regime, over (gasp) Christmas.

It’s really not that difficult and there are loads of different recipes you can indulge in that won’t leave you looking and feeling like a walrus.

I’ve come across many via our eSpares Pinterest, which have been nicely categorised into ‘Healthy and Delicious’ 🙂 A few that are maybe worth an extra mention below:

Courgette Lasagne

Loads of flavour less the carb loaded pasta.

Chicken Salad Stuffed Peppers

Recipe suggests using a light mayonnaise but I reckon stick to the mustard and spices alone for great flavour and even healthier option.

Rosemary Sweet Potato Fries

Any recipe that includes ‘fries’ is inherently good.

Chocolate Banana ‘Ice Cream’

Don’t let the quotations around ice cream put you off. This is the real deal.

Grilled Aubergine

As a side or main. You decide!

Crispy Southwest Chicken Wraps

‘Southwest’ married with ‘chicken’ will always live happily ever after.

Lastly but certainly not leastly, a truly healthy and minimal option for you come the big bad day. A small, nutritionally balanced Christmas in a can. No seconds shall be had!
